- 1 lb of Low-Sodium Bacon, regular or uncured
- 1/4 cups of Mayonnaise
- 1 tsp of Dijon Mustard
- 8 slices of Frozen Texas Toast, plain
- Green Leaf Lettuce

Procedures
Step One
Preheat air fryer and oven to 400 degrees. If you do not have an air fryer, both the tomatoes and toast can be baked in the oven. If using the oven for the tomatoes, you will need a baking tray with a wire rack. Note: Some brands of Texas host require a higher baking temperature. Follow package directions.
Step Two
Assemble a dipping station; a beaten egg to one bowl, flour to another and Panko to a third. Add2 Tsp. of the Italian Lemon Pepper seasoning to the Panko and stir.
Step Three
Dip each slice of tomato in egg, then the flour, in the egg again, followed by the seasoned Panko. Press the breadcrumbs into the tomato to make them adhere.
Microwave the bacon in batches until browned. Adjust cooking time for your microwave. Transfer to plate and pat dry with paper towel. Cover to keep warm.
While bacon is cooking, mix the Mayo, mustard, and 1/4 Tsp. of the seasoning together in a bowl.
Step Four
Add Texas Toast to a baking sheet. Bake about 5-7 minutes.
Wash and prep the lettuce.
Step Five
Spray breadcrumb-coated green tomatoes with the cooking spray. Add to air fryer basket and cook for about 5 -7 minutes, turning once, until they are browned to your liking. Add a pinch or two more of the seasoning to hot tomatoes.
