Ingredients

  • 1 tbsp of Canola Oil
  • 2 lb of Boneless Chuck Roast
  • 2 tbsp of Spicelopedia® Texas Brisket Seasoning
  • 1 cup of Sweet Onion, sliced
  • 1/2 cups of Celery, chopped
  • 1 cup of Sweet Baby Tri-Color Pepper, sliced into rings
  • 1 cup of Pinot Noir, or non-alcoholic red wine
  • 14 oz of Can Stewed Tomatoes, original recipe
  • 2 tsp of Worcestershire Sauce
  • 5 Fresh Thyme Springs
  • 2 tbsp of Cold Butter
  • Scallions, sliced (white and green parts)

     

    Procedures

    Step One

    Add canola oil to Dutch Oven or Heavy Pan (with a lid).

     

    Step Two

    Heat oil over medium heat.

     

    Step Three

    Rub roast with Texas Brisket Seasoning on both sides.

     

    Step Four

    Sear the roast to lock in the juices on all sides; remove from pan.

     

    Step Five

    Add onions, celery and peppers. Sauté 3 minutes.

    Serve over cheese grits *To preserve the integrity of the vegetables but to let the flavors enhance the gravy, remove the vegetables after about a half hour of cooking, and add them back in during the last half hour.
