Blueberry Barbecue Chicken made with Spicelopedia™ Peri Peri seasoning is a flavorful adventure, blending the rich sweetness of blueberries with a smoky, spicy edge. The juicy drumsticks are generously coated in a blueberry barbecue sauce, where the natural fruitiness and slight tartness of the blueberries combine perfectly with the bold heat of the Peri Peri seasoning. Ingredients
- ¼ cup olive oil
- 2 tsp. poultry seasoning
- 1 tsp. Spicelopedia™ Peri Peri seasoning
- 8 each chicken drumsticks (3-4 lbs)
- 2 cloves garlic
- ½ cup blueberries (fresh or frozen)
- ¼ cup chopped onion
- ¼ cup chicken stock
- ¼ cup blueberry preserves
- 1½ Tbsp. balsamic vinegar
Directions
- Get outdoor grill prepared for direct grilling over medium high heat.
- In a small bowl, combine oil, poultry seasoning, and Spicelopedia™ Peri Peri seasoning. Pat the chicken dry with paper towels, then rub all over with the seasoning mixture.
- Puree the garlic, blueberries, onion, stock, preserves, and vinegar. Reserve ½ cup of the mixture.
- Place the chicken on the grill rack and cover. Cook 20 minutes turning frequently. (cook to 165 degrees). During the last 5 minutes of grilling, brush the drumsticks with the sauce.
- When serving, drizzle the remaining ½ cup sauce over the chicken.
