This Buffalo Roasted Turkey is a bold twist on the classic, combining deep smoky heat with rich flavor. Ingredients
- 12-14 lb. turkey
- 1 Tbsp. Spicelopedia™ Peri Peri seasoning
- 1 stick salted butter, softened
- 1 stick (½ cup) salted butter, melted
- 2/3 cup hot sauce (like Frank’s)
- 2 Tbsp. distilled white vinegar
- 1 tsp. Worcestershire sauce
- 1 tsp. Spicelopedia™ Peri Peri seasoning
Hot Sauce (1 cup)
Directions
- Prepare the turkey following package directions .
- Place the softened butter in a medium bowl. Add the Spicelopedia™ Peri Peri seasoning and blend with a spatula. Gently place a spoon or your hand between the skin and meat of the breast and thighs. Rub the seasoned butter between the skin and meat.
- Prepare the hot sauce: Whisk together melted butter, hot sauce, vinegar, Worcestershire sauce, and Spicelopedia™ Peri Peri seasoning until well combined.
- After the turkey has been in the oven for about 2 hours, prepare the buffalo sauce and baste the turkey liberally with it (save ½ cup of the buffalo sauce). Return the turkey to the oven for 30 minutes, then baste again with the buffalo sauce and put it back in the oven for 30 minutes more or until an instant read thermometer reads 165°F when inserted into the inner thigh.
- When serving, drizzle the remaining ½ cup sauce over the turkey.
Recipe Note
Directions for the turkey should be on the wrapper of the bird.
Hot sauce can be stored in an airtight container in the refrigerator for up to one month. Shake well to blend before using.
