Lemon Sage Cornish Hens, seasoned to perfection with Spicelopedia™ Italian Lemon Pepper, exude a tantalizing aroma that beckons the senses. Ingredients
- 2 Cornish game hens (20-24 oz. each)
- 12 fresh sage leaves
- 4 lemon wedges
- 6 green onions, cut into 2” lengths, divided
- 2 Tbsp. butter, melted
- 1 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 2 garlic clove, minced
- 4 tsp. Spicelopedia™ Italian Lemon Pepper seasoning
- 6 small Yukon potatoes, halved
Directions
- Preheat oven to 375 degrees. Using the back of a spoon or your fingers, gently lift skin from hen breasts and place sage leaves and 1 tsp. Spicelopedia™ Italian Lemon Pepper seasoning under the skin of each bird. Place lemon wedges and a third of the onions in the hen cavities. Tuck wings under hens; tie legs together. Place in a small greased roasting pan.
- Combine butter, oil, lemon juice and garlic. Spoon half the mixture over hens. Sprinkle the remaining Spicelopedia™ Italian Lemon Pepper all over the hens.
- Bake 30 minutes. Add potatoes and remaining onions to pan. Brush hens with remaining butter mixture. Bake until a thermometer inserted in thickest part of thigh reads 165-170 degrees and potatoes are tender (approximately 30 minutes longer).
- Remove hens and place on a serving platter. Stir potatoes and onions to coat with pan drippings. Serve with hens.
