Penne with Pumpkin Sauce is a delightful fusion of rich, savory, and spicy flavors that captures the essence of fall. Ingredients
- 1 pound penne pasta (or pasta of choice)
- 3 cloves garlic, minced
- 2 Tbsp. olive oil
- 1, 15-ounce can Pumpkin Puree
- 1½ cups vegetable broth (or chicken broth)

2 tsp. Spicelopedia™ Peri Peri seasoning
- ¼ cup Greek yogurt
- ½ cup Parmesan cheese (shredded, plus more to garnish)
Directions
- Heat olive oil in a skillet. Sauté the garlic for 1 minute, then carefully add canned pumpkin puree, broth, and Spicelopedia™ Peri Peri seasoning. Simmer about 10 to 15 minutes until the sauce becomes thick.
- Once the sauce is blended and thickened, stir in the yogurt. To do this, temper the Greek yogurt with some of the sauce by whisking ½ cup of the sauce in a small bowl and mixing it with the Greek yogurt. Then, add the mixture back to the pan and stir to combine. This ensures the sauce doesn’t curdle when immediately hitting the hot pasta sauce.
- Add the shredded Parmesan and stir until mostly melted. Taste and adjust seasonings as desired.
- Serve over any shape of pasta, and garnish with additional Parmesan.
Recipe Note
Optional: add ¼ tsp. of nutmeg to the sauce if desired.
Be sure to use pumpkin puree, NOT pumpkin pie filling.
