Pork chops with Apples & Spiced Butternut Squash create a mouthwatering combination of smoky, sweet, and savory flavors. Ingredients
- 2 Tbsp. olive oil
- 4, 4-5 oz. boneless pork chops
- 1, 16 oz. package fresh diced butternut squash
- 2 Tbsp. butter, cut in pieces

2 tsp. Spicelopedia™ Wicked BBQ Rub seasoning
- 1½ tsp. pumpkin pie spice
- 1 large apple (gala used), cored and thinly sliced
- 2 Tbsp. maple syrup
- ¼ cup water
Directions
- Heat a 12" skillet on medium high heat. Add the olive oil. Season the pork chops with Spicelopedia™ Wicked BBQ Rub seasoning. Add the chops to the skillet and cook approximately 3 minutes per side. Transfer the chops to a plate.
- Place the butternut squash in a microwaveable bowl. Add the butter, ½ tsp. of the pumpkin pie spice, and 2 Tbsp. of water. Microwave 4-5 minutes or until tender. Stir to combine.
- Add the sliced apple and 2 Tbsp. water to the skillet. Cover and cook 2 minutes, stirring once.
- In a small bowl, stir together maple syrup and remaining 1 tsp. of pumpkin pie spice. Add the pork chops back to the pan. Cook with the apples 1-2 minutes or until chops reach 145 F.
- Serve pork chops topped with the apples. Serve with the butternut squash.
Recipe Note
Add more Spicelopedia™ Wicked BBQ Rub seasoning on the chops and into the squash for a spicier flavor profile.
