Ingredients
- 8 oz. bulk sausage, cooked
- 2 Tbsp. butter, plus extra for spreading on bread
- 6 medium eggs, beaten
- 4 large slices thick country-style white bread, buttered on all sides
- 4 thick slices cheddar cheese
- 6 slices bacon, cooked
- 2 Tbsp. fresh chives
- 1 tsp. Spicelopedia™ Peri Peri seasoning
Directions
- Heat a large frying pan or griddle on medium heat. Melt the butter and reduce the heat to low. Whisk the Spicelopedia™ Peri Peri seasoning into the eggs. Pour the eggs into the butter and stir until large, soft curds form (slightly undercooked is best so they don't become rubbery in the sandwich).
- Transfer cooked eggs to a plate. Carefully wipe the pan out with a paper towel and turn off the heat.
- Place two slices of the buttered bread down on a cutting board. Top each slice with half the cheese, the sausage, the bacon, the eggs, the chives, remaining cheese, and extra spice if you wish. Top with remaining buttered bread slices.
- Transfer one sandwich at a time to the pan and cook over medium heat until one side is golden-brown, approximately 4 minutes. Carefully flip the sandwich, being careful the filling doesn't fall out, and cook until the other side is golden-brown, another 4 minutes. Repeat with the remaining sandwich.

Sweet or spicy sausage can be used.
