Ingredients
- 4 Bone-in, skin on Chicken Thighs

Spicelopedia™ Island Citrus Blast Seasoning – 2 Tbsp. plus 2 Tbsp. for seasoning chicken
- 2 Tbsp. Dark Rum
- 2 Tbsp. Lite Soy Sauce
- 2 Tbsp. Plain Rice Vinegar
- 2 Tbsp. Extra Virgin Olive Oil
- Optional: Cooking Spray for Grill
Directions
- Pat the chicken dry with a paper towel. Combine 2 Tbsp. spice and the wet ingredients into a bowl. Whisk to combine. Pour over chicken and refrigerate for at least four hours, longer if you have the time.
- Treat grill with cooking spray (optional). Preheat grill to sear on direct side, cold (indirect heat) on the other side. Pat the excess marinade from the chicken with a paper towel. Season with 2 Tbsp. seasoning. Sear over direct heat for about five minutes, turning once.
- Move chicken to indirect heat. Cook until chicken reaches an internal temperature to 165 degrees. Rotating as needed.
