Red Snapper Ceviche

Red snapper ceviche is a popular dish that combines the freshness of seafood with the tangy flavors of citrus. But what exactly is red snapper ceviche and how is it made?
Ingredients
- 1 lb. fresh red snapper filets
- 1/2 cup brunoise celery
- 1/2 cup brunoise onion
- 2 tbsp. red chile pepper, diced
- 1 tbsp. roasted garlic chopped
- 1/4 cup olive oil
- 1 cup lime juice, orange juice, and lemon
- 1 tbsp. Island Citrus Blast seasoning
- 1 cup of cilantro chopped
- 3 tbsp. rice wine vinegar
- 1 cup of charred corn
- 1 ripened avocado
Directions
Small dice the snapper filets.
Mix snapper with all the liquids and let rest in fridge for 30 min.
Remove from fridge and add all other ingredients except for the avocado.
Adjust seasoning with salt and pepper to taste.
Let the seafood mixture rest in the fridge for another 45 minutes.
Pack each portion into 4 inch ring mold and remove the ring mold.
Slice 1/4 of an avocado and place on top for each portion.
Sprinkle a little more of the Island Citrus Blast seasoning for garnish.
