Ingredients
- 4, 6 oz. Swaii (or other thin whitefish)
- 3/4 cup cornstarch

2 Tbsp. Spicelopedia™ Italian Lemon Pepper seasoning
- 1½ cups panko bread crumbs
- 3/4 cup vegetable oil
- 2 Tbsp butter
- 1 Tbsp. fresh lemon juice
- 3 eggs
- 1/3 cup milk
Directions
- Add oil to a large saute pan on medium high.
- Combine cornstarch, lemon pepper seasoning, and panko crumbs. Transfer breading to a large dinner plate or baking dish.
- Whisk together the eggs and the milk in a shallow dish. Dip the fish in the egg wash then the cornstarch mixture.
- Heat oil to 350F. Carefully add breaded fish, 2 at a time, making sure to not overcrowd the pan. Saute each side until golden and crisp. Repeat with other filets.
- In a small saucepan melt 2 Tbsp. of butter and fresh lemon juice. Drizzle over fish.
