Ingredients
- 2, swordfish steaks 1-1/2 inches thick, skin on
- ½ cup olive oil
- 1 Tbsp. Spicelopedia™ Italian Lemon Pepper seasoning
- 2 large cloves garlic, crushed, optional
Directions
- In a stainless bowl or glass dish, whisk together all the ingredients except the swordfish. Then add the swordfish and marinate for 30 minutes to 1 hour. This same marinade recipe can be used for grilled, fresh sliced, summer vegetables such as zucchini, yellow summer squash, and colored bell peppers.
- Prepare your grill for high direct heat. Be sure to remove any debris from the grill grates. (The grill is hot enough when you place your hand 1 inch above the grill grates and you can only keep it there for 1 second). Wipe the grates with oil so the swordfish steaks don't stick when you turn them over.
- Lightly pat marinated swordfish steaks with a paper towel to remove excess marinade. Place the swordfish steaks on the hot grill grates. Grill for about 5 to 7 minutes on one side, until you have good grill marks. Turn over and cook a few more minutes until the fish is just cooked through, 140-145 degrees. Remove from heat and let rest a few minutes before serving. If grilling vegetables, grill to mark each side only.
Recipe Note
Do not marinate for more than 1 hour. The acids in the marinade break down the fish.
Fresh swordfish should be pink, not brown, and should not have a "fishy" odor. Cook fresh fish the day you buy it.
