Ingredients
- 2 cups halved fresh cherry tomatoes
- 1 cup cucumber slices quartered, (1/4 inch slices quartered)
- ½ cup red onion, diced
- 1 tsp. Spicelopedia™ Italian Lemon Pepper seasoning
- 2 Tbsp. olive oil
- 2 tsp. balsamic vinegar
- 1 cup feta cheese in 1/2 inch chunks
Directions
- In a medium size stainless bowl, add the Spicelopedia™ Italian Lemon Pepper seasoning, olive oil, and balsamic vinegar. Wisk together well. Add the cherry tomatoes, cucumber, and feta cheese chunks. Fold together with a spatula so all the ingredients are covered.
- Cover the salad and chill 4-8 hours then serve.
Recipe Note
This salad can be served as a side salad, tossed with pasta, or over grilled fish or chicken. Serve with crusty bread.
