Ingredients
- 3 lbs. Campari or plum tomatoes, halved
- 3 Tbsp. Spicelopedia™ Italian Lemon Pepper seasoning, divided
- ¼ cup balsamic vinegar (high quality)
- 1/8 cup extra virgin olive oil
- ¼ cup dry white wine
- 2 Tbsp. tomato paste
Directions
- Preheat oven to 375 degrees.
- Add tomatoes, sliced side up, in a single layer on a baking sheet lined with foil. Sprinkle with half the seasoning, and drizzle with balsamic vinegar and olive oil. Bake for 1 hour and let cool.
- Remove the skins from the tomatoes. Add the wine, tomato paste, and remaining seasoning to a sauce pot. Bring to a boil and reduce to a simmer for about one hour.
Recipe Note
If using directly on cooked pasta, add anything you want, including cooked ground beef or sausage, fresh garlic and fresh herbs. Otherwise, this simple sauce works well on something cheesy, such as a baked pasta dish.
