Tbsp. + 1 tsp. Spicelopedia™ Italian Lemon Pepper seasoning
- 2, 4 oz. boneless, skinless chicken breasts
- 2 Tbsp. olive oil
- 1 cup dry orzo pasta, cooked to package directions and drained
- 4 fresh asparagus spears, broken into 1½-2 inch pieces
- ½ cup heavy cream
- 1 Tbsp. salted butter
Directions
Place asparagus in boiling salted water for 1-2 minutes. Drain and shock with very cold water to stop the cooking process.
Place the chicken in a bowl and cover with 1 Tbsp. olive oil and 1 Tbsp. seasoning.
Heat a sauté pan on medium high heat and add 2 Tbsp. of olive oil. Add chicken and cook on both sides to 160 degrees. Remove from pan and slice each breast into strips.
Wipe out the pan and place again on medium high heat (new pan can be used also). Add the asparagus, cream, butter, orzo, and 1 tsp. seasoning. Stir well to combine and bring to a simmer, cooking until blended.
Serve on 2 plates topped with the sliced chicken.
