Ingredients

1 Butternut Squash, peeled, seeded and cut into 1 1/2 inch pieces

1 small Apple-MacIntosh, Cortland, or Granny Smith, peeled and chopped

1 medium Sweet Onion, chopped

1 tbsp of Light Brown Sugar
- Salt

¼ tsp of Ground Cinnamon

1 ½ cups of Chicken Broth

¼ cups of Half & Half, regular or fat-free
- Fresh Chopped Parsley
-
¼ tsp of Spicelopedia Peri Peri Chicken Seasoning
Directions
In a large saucepan or Dutch oven, combine the first 8 ingredients. Cover and simmer until the squash is tender.
- In a food processor, or blender add half the soup mixture. Cover and blend until the mixture is smooth. Repeat with the second half of the soup.
- Place all the blended soup back in the saucepan. Stir in half & half. Taste to adjust seasonings.
- Heat the soup over low heat until it is hot. Serve with parsley or chive garnish.
