This maple pecan fish filet tantalizes the senses with its harmonious blend of textures and flavors. The cobia, known for its firm and rich flesh, is expertly seared with Spicelopedia™ Peri Peri seasoning, creating a delicate flaky interior and a slightly crispy exterior. This spicy sear is perfectly complemented by the crunchy pecan/almond crust, adding a delightful nuttiness to each bite. The dish is then elevated with a drizzle of luxurious maple sauce, which imparts a subtle sweetness that enhances the natural flavors of the fish. Ingredients
- 4, 6 oz. fish filets of choice (we used cobia)
- ¼ cup almonds or pecans
- 1 Tbsp. Spicelopedia™ Peri Peri seasoning
- ¼ cup olive oil
- ¼ cup maple syrup
- 1 Tbsp. soy sauce
Directions
- Place the nuts in a plastic bag and finely crush with a meat mallet or rolling pin. Add the Spicelopedia™ Peri Peri seasoning to the bag.
- Moisten the fish with water and add them to the bag of nuts and seasoning. Coat the fish well on all sides.
- Heat a large sauté pan on medium high. Add half the olive oil to the hot pan. Add the fish filets and turn the heat to medium. Cook the fish until it is golden brown, about 3-4 minutes per side. Add the remaining oil to the pan as needed when turning the fish. (Cook fish to about 140-145 degrees).
- Remove the fish from the pan. Discard extra oil if need be. Add the maple syrup and soy sauce to the pan and whisk until the sauce simmers and begins to thicken. Serve the sauce over the fish.
