1, 15 oz. can of fire-roasted tomatoes

3, 14.5 oz. cans of chicken broth

1/2 medium sweet onion, diced

1, 9 oz. package of cheese tortellini

4 cups fresh baby spinach

2 tsp. Spicelopedia™ Peri-Peri Chicken seasoning

1 Tbsp olive oil
Directions
In a large saucepan, heat olive oil over medium heat. Saute onion until soft and translucent, about 4-5 mins. Add tomatoes, broth, and seasoning.
Bring soup to a boil, add the tortellini, and return to a gentle boil.
Cook uncovered until the tortellini is tender, about 7-9 minutes. Stir in the spinach. Serve with grated Parmesan cheese and crusty bread.
Recipe Note
This is delicious with cooked Italian chicken or pork sausage added.
