4 lbs. Chicken Wings, fresh or frozen* (wingettes, drumettes, or both)

4 Tbsp. Spicelopedia™ Rajun Cajun Seasoning
- 2 Tbsp. Baking Powder
- 1/2 cup Honey
- 1/4 cup Lemon Juice
Directions
Preheat the Oven to 250 degrees F.
- Toss wings in Cajun Seasoning and Baking Powder. Spread the wings out evenly on a wire rack placed on top of a baking sheet.
- Bake on the bottom rack of the oven for thirty (30) minutes.
- Transfer the baking sheet to the top rack of the oven. Increase heat to 450 degrees. Continue to bake for forty (40) minutes.
- Add the honey and lemon juice to a bowl. Stir. Transfer the hot-cooked chicken wings to the bowl and toss the wings in the honey/lemon mixture.
Recipe Note
If using fresh (not frozen) chicken wings – to cut the wings –
Place the chicken wing on a cutting board, skin side down; locate the ridge between the drumette and wingette; cut parallel to the drumette through the ridge and then through the second ridge to separate the wingette and the tip. Discard the tip or save it to prepare chicken stock.
If using frozen wings, thaw before preparing.
Note: For milder wings, reduce seasoning to taste.
