Ingredients
- 12 oz. extra large peeled and deveined shrimp (21-25 ct.) thawed
- 3 Tbsp. olive oil, divided
- 2 tsp. Spicelopedia™ Rajun Cajun seasoning
- 1½ cups orzo
- ¼ cup red onion, finely chopped
- 4½ cups chicken or vegetable broth
- ½ bunch asparagus, trimmed and cut into ½ inch pieces
Directions
- Pat shrimp dry and place in a stainless steel bowl. Toss well with 1 Tbsp. oil and 1 tsp. Spicelopedia™ seasoning.
- In a large nonstick skillet, heat 2 Tbsp. olive oil on medium high heat. When the oil begins to shimmer, add the shrimp. Cook about 3 minutes per side until lightly browned on both sides. Transfer to a plate and cover to keep warm.
- Add the orzo and onion to the hot skillet and toast orzo, stirring constantly for 2-3 minutes. Stir in broth and bring to a simmer. Cook over medium stirring until orzo is tender, about 12 minutes.
- Stir in the asparagus and remaining seasoning. Cook until the asparagus is tender, about 2 minutes. Add shrimp to the skillet and cover just to warm them. Serve in bowls.
