Butternut Squash Mac and Cheese seasoned with Spicelopedia™ Southwest Zesty Fiesta seasoning is a delightful fusion of creamy comfort and bold, southwestern flavors. For a spooky Halloween variation, you can replace the macaroni or shells with bow tie pasta – the melted mozzarella cheese on top creates the illusion of cobwebs.
Ingredients
- 3 cups of cubed butternut squash
- 3 cups (dry) macaroni, shell or bow tie pasta
- ½ cup 2% milk

1 Tbsp. Spicelopedia™ Southwest Zesty Fiesta seasoning
- 1 cup shredded cheddar cheese blend*
- ½ cup shredded mozzarella cheese
- 2 Tbsp. butter
Directions
- Preheat oven to 350 degrees. Add squash to a pot of water. Bring to a boil and reduce to simmer, about 10 minutes, until softened.
- While the squash is cooking, or in the same pot of water after you remove it, cook the pasta according to the package directions.**
- Combine the cooked squash, milk, seasoning and cheddar cheese in a food processor or blender. Pulse until creamy.
- Fold the pasta into the sauce and add to a baking dish. Bake for approximately 25 minutes.
- Set oven to broil. Remove the baking dish. Top with the mozzarella and dot with the butter. Broil until the cheese topping is gooey.
Recipe Note
*Select a cheese blend with three or four different types of cheddar.
** For best results, cook the pasta to al dente.
