These Primo Short Ribs are a rich and deeply flavorful dish, perfect for a comforting meal. The ribs are seasoned generously with Spicelopedia™'s Primo Steak & Grill Spice, a blend that enhances the beef's natural flavors with a robust, smoky, and slightly peppery kick. Cooked to perfection with tender carrots and sweet pearl onions, the dish is infused with the earthy depth of red wine, which combines beautifully with beef stock to create a luxurious sauce. Tomato paste adds a hint of acidity that balances the dish's richness, while also lending a slight sweetness. The result is a melt-in-your-mouth, savory masterpiece with tender, fall-off-the-bone meat and a velvety, aromatic sauce that soaks into every bite.
Ingredients
- 1 Tbsp. avocado oil
- Flour (for dusting ribs)
- 2 lbs. bone-in short ribs
- 1½ Tbsp. Spicelopedia™ Primo Steak & Grill Spice
- ½ cup diced carrots
- 3 oz. (½ can) tomato paste (we suggest basil, garlic, and oregano infused)
- ½ cup frozen pearl onions
- ½ cup beef stock
- 2 cups dry red wine or non-alcoholic wine
Directions
- Preheat oven to 350 degrees. Add the oil to a heated Dutch oven. Dust the ribs with flour.
- Brown the ribs on all sides in the oil on the stovetop. Remove the ribs from the pan and season with the seasoning.
- Sauté the carrots for about three minutes. Add the ribs back to the pan.
- Add the tomato paste, pearl onions, beef stock and the wine. Cover and place in oven.
- After 1½ hours, reduce the oven to 300 degrees and continue to cook for another 1½ hours until the meat is tender and falls off the bone.
Recipe Note
Suggestion: Serve with mashed potatoes.
