Ingredients
- 4, 6 oz. salmon filets, with or without skin (patted dry)

Tbsp. Spicelopedia™ Southwest Zesty Fiesta seasoning
- Prepared basmati rice for 4
- ½ cup frozen (defrosted) or fresh green peas
- 3-5 Tbsp. olive oil
- 2 Tbsp. butter
- Lemon garnish
Directions
Season the salmon filets on all sides with 1 tsp. seasoning each. For skin-on filets only season the top of the fish.
Heat a large skillet on medium high heat. Add the olive oil. Swirl the oil and add the salmon filets skin side down. (Be sure the pan is hot before adding fish).
When the salmon filets are cooked halfway, roughly six minutes, add 2 additional Tbsp. oil if needed, and flip fish over. Cook for 1-2 more minutes.
Add the peas and butter to the finished rice pilaf. Season with remaining seasoning.
Serve the fish with pilaf and lemon wedge.
