This Tailgate Pulled Chicken is a crowd-pleasing, flavorful dish perfect for casual gatherings and sports events.
Ingredients

10-12 oz. boneless skinless chicken breasts (frozen)
- 10 oz. fire-roasted tomatoes with diced green chili, canned
- 3 Tbsp Spicelopedia™ Southwest Zesty Fiesta seasoning, divided
- ¼ cup olive oil
- ¼ cup water
- Zest of one lime
Directions
Add the frozen chicken breasts to a slow cooker, then add tomatoes, two tablespoons of the seasoning, olive oil and water.
- Cook over low heat for 6 hours.
- Remove the lid and pull the chicken using two forks, then add the remaining seasoning and the lime zest.
- Cover and continue to cook for 1 hour on low.
Recipe Note
Serve as tacos with your favorite tortillas (flour, corn, or gluten-free) and taco toppings. You can also serve on rolls with your favorite condiments.
Note: if using chicken that isn’t frozen, cut the cooking time in half.
