Ingredients
- 4 Italian turkey sausage links (mild or hot)
- 1 tsp. avocado oil
- 1 bulb fennel, sliced (reserve a few fronds for garnish)
- ½ lb. penne or rigatoni pasta
- ½ cup canned pumpkin puree
- ½ cup ricotta cheese
- 1½ Tbsp. Spicelopedia™ Southwest Zesty Fiesta seasoning
- 2 cups baby spinach
- Reserved pasta water
- Parmesan cheese for topping
Directions
- Preheat oven to 350 degrees.
- Place the sausage on a baking sheet and bake until browned, about 45 minutes. Remove from oven. Slice the sausage into bite-sized rounds.
- While the sausage is cooking, prepare the pasta according to the package directions, drain it, and reserve the water.
- Meanwhile, sauté the fennel in a skillet. Toss the cooked pasta, sliced sausage, pumpkin, and ricotta together (in the same skillet with the fennel). Stir in the seasoning.
- Thin the sauce with a ladle or two of the pasta water. Wilt in the spinach.
- Serve immediately and top with parmesan cheese.
