Bacon and Asparagus Frittata Recipe

Ingredients
- 8 slices of bacon, cooked, crumbled.
- 8 oz. of asparagus, fresh or frozen
- 8 extra-large eggs or ten large eggs
- ¼ cup grated Parmesan Cheese, divided.
- ¼ cup Half and Half cream

½ Tbsp. Spicelopedia™ Texas Brisket with Hatch Chili Seasoning
- Chopped chives or Fresh Parsley for garnish (or both), optional
- Cooking Spray, optional
Directions
- Preheat the oven to 375 degrees.
- Microwave the asparagus in a microwave-safe container with a little bit of water for 3-4 minutes until softened. Set aside to cool. Cut into half-inch pieces. Cook longer if you like the asparagus to be softer. Add the asparagus and 2/3 of the crumbled bacon to the bottom of a pie pan (I suggest ceramic) coated with cooking spray if using.
- Whisk together the eggs, half of the parmesan, the cream, and the Brisket seasoning. Pour into the pie pan over asparagus and bacon.
- Bake for approximately 25 minutes until the center is set. During the last few minutes, top with the remaining parmesan cheese. Remove from the oven and rest for about five minutes before slicing—top with chives, parsley (if using) and the remaining bacon.
