Ingredients

Half a Large Red Bell Pepper

Half a Medium Red Onion

Half a Medium Sweet Onion

2 tbsp of Extra Virgin Olive Oil (Mild Flavor)

1lbs of Ground Beef (suggest 80/20)

½ lbs of Ground Pork

¼ cups of Celery, diced

2 Large Eggs, beaten

1 Tbsp of Organic Tomato Paste

1 Tbsp of Texas Brisket Seasoning

½ cups of Seasoned Bread Crumbs

1 sprig of Fresh Oregano, chopped

¼ cups of All-Natural Ketchup
-
2 tbsp of Organic Tomato Paste*
-
½ tsp of Worcestershire Sauce

1 tbsp of Organic Coconut Brown Sugar
Directions
Remove seeds from half pepper. Cut in half again.
- Cut half onions in half.
- Add to heavy skillet with olive oil, toss.
- Broil approximately 20 minutes, turning once until skin blisters
- Remove from broiler and let cool
- Discard outer skin layers of onion and peel skin from pepper. Chop.
- Preheat oven to 350 degrees.
- Add cooled, chopped blistered onion and pepper mixture, ground beef, pork, celery, beaten eggs, tomato paste, Texas Brisket Seasoning, bread crumbs and chopped oregano to a bowl. Mix with hands until combined. Form into meatloaf.
- Place meatloaf on foil lined cookie sheet. Bake for 45 minutes.
- Mix ketchup, remaining tomato paste and Worcestershire Sauce together. Brush on top of meatloaf, return to oven and bake an additional 15 minutes.
Recipe Note
Substitute gluten free breadcrumbs. Can grill peppers/onions to blister.
