2 ½ lbs of Corned Beef Brisket
- 2 tbsp of Stone Stone Ground Mustard

1 tbsp of Spicelopedia Texas Brisket Seasoning
- 16 oz of Amber Beer
- 4-5 sprigs of Thyme, fresh
- 5-6 quartered Potatoes, golden baby
- 1 medium Onion, sweet
- 3 large Carrots
- 2 large Parsnips
- 2 tbsp of Brown Sugar
- 1 head of Green Cabbage
- ½ stick of Butter
- 3 slices of cooked Bacon
Directions
Preheat oven to 325 degrees.
- Place the brisket into a baking dish, fat side up. Brush with mustard and sprinkle with Texas Brisket Seasoning.
- Mix beer with about ½ cup of cold water. Carefully pour around brisket, making sure not to wash off the mustard and seasoning. Add time sprigs. Cover with tin foil and bake for two hours.
- While the corned beef is cooking, prep the vegetables by cutting them into chunks. Reserve half of the onion. Toss the vegetables with the coconut brown sugar. Uncover pan. Add vegetables around the brisket. Up the heat to 350 and continue to bake for approximately 35-45 minutes until vegetables are tender. Sauté the cabbage with remaining onion in butter. Top with cooked, crumbled bacon.
