Lobster Colorado is a great dish to celebrate the New Year. It consists of bacon-wrapped filets topped with lobster meat and browned butter. Our Spicelopedia™ version simplifies the recipe so you can quickly prepare it for a holiday meal or a romantic dinner for two.
Ingredients

4 – 6 oz Filet (tenderloins)

1 Tbsp of Spicelopedia™ Texas Brisket Seasoning
- 4 slices of Bacon
- 1/2 cup, divided of Butter
- one clove, peeled of Garlic
- 1 sprig of Thyme
- 2 Tbsp of Lemon Juice

8 ounces, chopped or chunked of 1 Lobster Meat
Directions
For the Filet
Preheat your oven broiler to 500 degrees F.
- Season tenderloins with the Texas Brisket Seasoning
- Wrap each filet with a slice of bacon and secure it with a toothpick.
- Place steaks on a broiling pan. Broiled to your desired doneness – about 8 to 10 minutes on each side for medium rare. Adjust cooking time for the desired temperature.
For the Lobster
While the tenderloins are cooking, melt 1/4 cup of the butter in a saucepan over medium heat along with the whole garlic clove, the sprig of thyme, and the lemon juice.
- Stir in the chopped lobster meat and cook until it’s opaque. Remove the lobster with a slotted spoon.
- If you want the lobster meat to be browned, add it to a separate pan and broil it alongside the steak for the last two minutes of the cooking process. This step can be omitted.
For the Browned Butter
heat the remaining 1/4 cup of lemon juice over high heat in a small saucepan until it turns a hazelnut color.
Recipe Note
Serving Suggestion – top with fresh parsley and serve with a lemon wedge.
