Ingredients

2 lbs of Skirt Steak

1/4 cups of Olive Oil

2 tbsp of Spicelopedia® Texas Brisket Seasoning

1 tbsp of Jalapeño, diced

1 tbsp of Worcestershire Sauce

1 bunch of Culantro Leaves

1 tbsp of Lime Zest
-
1/4 cups of Olive Oil

8 oz of Havarti Cheese, shredded

2 tbsp of Spicelopedia® Texas Brisket Seasoning
-
3 tbsp of Red Onion, diced
-
2 tbsp of Butter, unsalted
-
1 tbsp of Flour

Torn Cilantro, fresh
For the queso
Directions
Add skirt steak to a storage (plastic) bag along with half of the seasoning, diced pepper, Worcestershire, Cilantro, lime zest and olive oil. Close the bag and rub the seasoning to evenly coat.
Marinate under refrigeration for four hours.
Remove meat from marinade. Pat dry with paper towel. Rub with remaining seasoning. Let sit at room temperature for about 30 minutes.
Preheat grill pan to medium high.
Sear meat on grill, about three minutes each side. Remove from grill and let rest.
While the meat is resting, slightly melt the Havarti in the microwave, about one minute.
Add onion, butter and flour to saucepan. Whisk to form a roux. Add in the slightly melted cheese and continue to whisk. If the queso is too thick, you can add milk.
Transfer to serving bowl. Top with fresh herbs (if using)
To serve the tacos, slice the meat against the grain. You can heat the tortillas on the grill to slightly toast (optional). Top with your favorite toppings and the queso.
