Ingredients

1 1/2 lbs of Chicken Tenderloin Strips

1 Tbsp of Spicelopedia® Wicked Pork Rub with Ghost Pepper

1/4 cup of Dill Pickle Juice

1/2 cup of Buttermilk

2 cups of All Purpose Flour

4 tbsp of Salted Butter

1 tbsp of Dark Brown Sugar, packed

2 tbsp of Apple Cider Vinegar

Cooking Oil

2 Sage Leaves
Directions
Add chicken along with the brine ingredients to a container. Cover and refrigerate for at least one hour.
Add the additional spice rub to the flour. Remove the chicken from the brine. Shake off excess and roll in the flour, shaking off the lot.
Heat cooking oil to 350 degrees, no more than 375 degrees. Meanwhile, preheat oven to 350 degrees. Do not overcrowd the frying pan. Fry the chicken in batches for 5-7 minutes until golden brown. Note: Since you are not using eggs, keeping your oil at the right temperature is essential so it doesn’t separate from the chicken.
Transfer to baking sheet. Turn the oven off and keep the chicken warm.
Meanwhile, add all ingredients for the sauce into a saucepan. Stir and reduce by half over medium heat.
Remove the chicken from the oven and baste with the hot sauce.
