Ingredients
- 30 medium/large Brussel sprouts, cleaned and halved
- 2 large carrots, peeled and sliced diagonally 3/8” thick
- ½ sweet onion, sliced ¼ - 3/8”
- 6 slices bacon, cut into 1” pieces
- 3 Tbsp. olive oil, divided
- 2 tsp. Spicelopedia™ Wicked BBQ Rub seasoning
HOT HONEY DRIZZLE
- ½ cup honey
- 1 Tbsp. Spicelopedia™ Wicked BBQ Rub seasoning
Directions
- Preheat the oven to 450 degrees. Toss the vegetables in a bowl with 2 Tbsp. olive oil and 2 tsp. of the seasoning. Toss until all is well-coated.
- Place the carrots and Brussel sprouts flat side down on a baking sheet. Place the bacon pieces around the vegetables.
- Bake for 20-25 minutes, flipping halfway through cooking. While the vegetables cook, make the hot honey drizzle by combining the honey and 1 Tbsp. of the seasoning.
- When the vegetables are done, drizzle with hot honey and serve.
Recipe Note
Microwaving the honey slightly makes it easier to add the spice. Feel free to use any vegetable combination.
