Ingredients
- 1 Turkey (12-14 pounds)
- ¼ cup Olive Oil

½ cup Spicelopedia Wicked BBQ Rub
- 2 cups hickory wood chips (replace as needed)
Directions
Brine the turkey in saltwater overnight to keep it moist and tender.
- Remove turkey from brine and pat dry with paper towels.
- Preheat your smoker to 225°F.
- In a small bowl, mix together the olive oil and Spicelopedia Wicked BBQ Rub with Ghost Pepper seasoning.
- Rub the seasoning mixture all over the turkey, making sure to get the seasoning under the skin and inside the cavity of the bird.
- Place the turkey in your smoker and add the hickory wood chips to the smoker box or directly onto the coals.
- Cook the turkey for 6-8 hours or until the internal temperature of the thickest part of the bird reaches 165°F.
- Remove the turkey from the smoker and let it rest for 20-30 minutes before carving.
